IMAP is designed to work across multiple computers, laptops, tablets, and smart phones all syncing to the same email account. Having Outlook set up to delete old emails off the mail server keeps your email account from filling up, thus shutting down your email service. Many people like to keep copies of important emails as documentation on their computer, while being able to delete them off other devices, like their phones, etc. This allows you to download a copy of the same email to various devices before it gets deleted off the mail server. POP3 creates local copies of emails (on your computer in Outlook 10) and then deletes the originals from the server after so many days, if you have things set up correctly. Most of them are way too busy to worry about things like that. We find that POP3 works the best for many of our business clients, because they do not want to constantly manually delete emails one by one from their account to keep from going over their mailbox limit.
